Mexican Cauliflower Rice Bowls with Mango Poblano Pico
Ingredients
Equipment
Method
- Preheat the oven to 350°F. If using frozen cauliflower rice, microwave each bag for about 3 minutes and drain well. Toss the cauliflower rice with olive oil, garlic powder, onion powder, smoked paprika, cumin, and a light amount of salt and pepper. Spread evenly on a parchment-lined baking sheet without overcrowding. Roast for 7–10 minutes, stirring halfway through, until lightly golden with some texture and not soggy.
- Remove the cauliflower rice from the oven. While it is still hot, squeeze fresh lime juice over it, add the chopped cilantro, and gently toss. Adjust the seasoning to taste. Adding the lime and cilantro after roasting keeps the flavor bright and fresh.
- Season the chicken breasts with olive oil, chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper. Cook in a skillet over medium heat until fully cooked. Shred the chicken, return it to the skillet, and cook for another 2–3 minutes so it can absorb the seasoned juices.
- Toss the shrimp with olive oil, chili powder, smoked paprika, cumin, garlic powder, lime juice, salt, and pepper. Cook in a hot skillet for 2–3 minutes per side, until pink, cooked through, and lightly caramelized. Do not overcook.
- Heat the black beans in a small saucepan with cumin, garlic powder, onion powder, chili powder, and water or broth as needed. Simmer for 5–7 minutes.
- Roast the poblano until the skin blisters, then peel and dice it. Combine the poblano with mango, red onion, Roma tomato, lime juice, cilantro if using, and salt. Let the pico sit for 10–15 minutes so the flavors can blend.
- Start with shredded lettuce and cilantro-lime cauliflower rice. Arrange the fajita chicken, shrimp, black beans, fresh tomatoes, onions, and cheese in sections. Top with mango poblano pico. Add sour cream, lime crema or Greek yogurt, guacamole or avocado, and a lime wedge if desired. The ingredients can touch, but keeping them sectioned gives the bowl a colorful, balanced presentation.
Notes
Tips for Best Results
- Don’t overcrowd cauliflower (prevents steaming)
- Let pico sit for deeper flavor
- Use fresh lime juice (game changer)
- Season each layer—not just the bowl
Storing & Serving
Store leftovers in an airtight container in the refrigerator for up to 3–4 days. For best results, keep the mango poblano pico and any fresh toppings separate from the warm bowl components until serving.
Reheat the cauliflower rice, chicken, shrimp, and beans gently in the microwave or in a skillet until hot throughout, then add the pico and fresh toppings after reheating.
For meal prep, divide the bowl components into containers and refrigerate separately when possible to help maintain the best texture.
For more information on safely storing leftovers, see the USDA’s food safety guidance.
