Roast the Cauliflower Rice
- Preheat the oven to 350°F. If using frozen cauliflower rice, microwave each bag for about 3 minutes and drain well. Toss the cauliflower rice with olive oil, garlic powder, onion powder, smoked paprika, cumin, and a light amount of salt and pepper. Spread evenly on a parchment-lined baking sheet without overcrowding. Roast for 7–10 minutes, stirring halfway through, until lightly golden with some texture and not soggy.
Finish with Cilantro and Lime
- Remove the cauliflower rice from the oven. While it is still hot, squeeze fresh lime juice over it, add the chopped cilantro, and gently toss. Adjust the seasoning to taste. Adding the lime and cilantro after roasting keeps the flavor bright and fresh.
Cook the Chicken
- Season the chicken breasts with olive oil, chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper. Cook in a skillet over medium heat until fully cooked. Shred the chicken, return it to the skillet, and cook for another 2–3 minutes so it can absorb the seasoned juices.
Cook the Shrimp
- Toss the shrimp with olive oil, chili powder, smoked paprika, cumin, garlic powder, lime juice, salt, and pepper. Cook in a hot skillet for 2–3 minutes per side, until pink, cooked through, and lightly caramelized. Do not overcook.
Season the Black Beans
- Heat the black beans in a small saucepan with cumin, garlic powder, onion powder, chili powder, and water or broth as needed. Simmer for 5–7 minutes.
Make the Mango Poblano Pico
- Roast the poblano until the skin blisters, then peel and dice it. Combine the poblano with mango, red onion, Roma tomato, lime juice, cilantro if using, and salt. Let the pico sit for 10–15 minutes so the flavors can blend.
Build the Bowls
- Start with shredded lettuce and cilantro-lime cauliflower rice. Arrange the fajita chicken, shrimp, black beans, fresh tomatoes, onions, and cheese in sections. Top with mango poblano pico. Add sour cream, lime crema or Greek yogurt, guacamole or avocado, and a lime wedge if desired. The ingredients can touch, but keeping them sectioned gives the bowl a colorful, balanced presentation.
Notes
Do not overcrowd the cauliflower rice; give it room to roast instead of steam.
