This Creamy Potato, Leek, Sausage and Kale Soup is one of those recipes that feels like comfort from the very first spoonful. It has tender potatoes, sautéed leeks, seasoned meat, and ribbons of kale mingling in a rich, creamy broth.
And yes, the meat has to mingle! It isn’t supposed to sit on top like the lead singer. Every ingredient plays its part in making this soup hearty, flavorful, and satisfying.
I switch between Aldi’s breakfast pork sausage and seasoned ground chicken depending on the flavor I’m craving. The pork sausage gives the soup a richer, more savory taste, while ground chicken makes it a little lighter without sacrificing flavor.

- Heat a large soup pot or Dutch oven over medium heat. Add the breakfast pork sausage or seasoned ground chicken.
- Break the meat into small, chunky crumbles as it cooks. Continue cooking until the meat is completely browned. Transfer the cooked meat to a plate and set it aside.
- If the pot appears dry, add enough butter or olive oil to lightly coat the bottom.
- Add the diced onion and sliced leeks. Sauté for 5 to 7 minutes, or until softened.
- Add the minced garlic and cook for approximately 30 seconds, stirring frequently so it does not burn.
- Add the diced potatoes and chicken broth. Stir and scrape the bottom of the pot to incorporate the flavorful browned bits.
- Bring the soup to a gentle boil. Reduce the heat, partially cover the pot, and simmer for 15 to 20 minutes, or until the potatoes are fork-tender.
- Lightly mash a small portion of the potatoes directly in the pot. This helps thicken the soup while leaving plenty of small potato pieces intact.
- Pour in the heavy whipping cream and return the cooked meat to the pot. Stir thoroughly so the meat mingles throughout the creamy broth.
- Add the sliced kale, smoked paprika, black pepper, and crushed red pepper flakes, if using.
- Simmer gently for another 5 to 10 minutes, stirring occasionally, until the kale is tender and everything is heated through. Do not allow the cream to boil rapidly.
- Taste the soup before adding salt because the sausage and chicken broth may already contain enough sodium. Adjust the seasonings as needed and serve warm.

Storage & Serving
Store leftover soup in an airtight container in the refrigerator for up to 3–4 days.
Reheat gently on the stovetop over medium-low heat or in the microwave, stirring occasionally until hot throughout. If the soup thickens in the refrigerator, add a small splash of broth, milk, or cream while reheating until it reaches the consistency you like.
For meal prep, portion the cooled soup into individual containers before refrigerating. If freezing, keep in mind that potatoes and creamy soups can sometimes change slightly in texture after thawing.
