If using ground chicken, add:
- 1 tbsp olive oil
- 1 tsp sage
- 1 tsp poultry seasoning
- 1 tsp ground mustard
- 1 tsp chicken bouillon
- 1 tsp Mrs. Dash
- ½ tsp smoked paprika
- ½ tsp black pepper
🥛 Creamy Keto Gravy
- 16–32 oz heavy whipping cream (adjust to desired richness)
- ½ stick butter
- ¼ bag shredded Parmesan cheese
- ½ bag Colby Jack cheese
- ½ cup chicken bouillon
- 1 cup water (for thinning)
- 1 tbsp minced garlic (“jarlic”)
- 1 tsp garlic powder
- Onion powder (to taste)
- ¼ tsp crushed red pepper flakes
- 1½ tsp nutritional yeast
- 1 tsp dried basil
- ½ tsp dried thyme
- 1 small Vidalia onion, diced
- ¼ cup red onion, diced
- 1–2 tbsp cottage cheese (for added creaminess)
- Xanthan gum (as needed for thickening)
🔪 Instructions
1. Prepare the Sausage
Option 1: Breakfast Sausage
- Preheat oven to 350°F.
- Spread sausage evenly on a parchment-lined baking sheet.
- Bake for 15–20 minutes.
- Remove and break into chunks.
👉 This gives you those hearty, rustic pieces that hold up in the gravy.
Option 2: Ground Chicken
- In a bowl, combine chicken, olive oil, and all seasonings.
- Mix well until fully coated.
- Spread on a baking sheet and bake as above.
2. Enhance the Flavor (Don’t Skip This 👀)
- Transfer cooked meat to a skillet.
- Add 1 cup of water and cook over medium heat.
- Let it simmer until the water cooks off.
👉 This step reduces excess grease and pulls out deeper flavor.
3. Build the Gravy
- In a Dutch oven or deep skillet, melt butter over low–medium heat.
- Add diced onions; sauté 5–7 minutes until softened (not mushy).
- Lower the heat and add:
- heavy cream
- minced garlic
- cheeses
- chicken bouillon
- seasonings
- Stir continuously as everything melts together.
👉 This is where it transforms… from ingredients into something you feel.
4. Bring It All Together
- Add sausage to the gravy.
- Stir gently and let simmer 5–7 minutes.
- Add:
- cottage cheese (for extra creaminess)
- xanthan gum (a pinch at a time, only if needed)
