  • 1 tsp ground mustard
  • 1 tsp chicken bouillon
  • 1 tsp Mrs. Dash
  • ½ tsp smoked paprika

🥛 Creamy Keto Gravy

  • 16–32 oz heavy whipping cream (adjust to desired richness)
  • ½ stick butter
  • ¼ bag shredded Parmesan cheese
  • ½ bag Colby Jack cheese
  • ½ cup chicken bouillon
  • 1 cup water (for thinning)
  • 1 tbsp minced garlic (“jarlic”)
  • 1 tsp garlic powder
  • Onion powder (to taste)
  • ¼ tsp crushed red pepper flakes
  • 1½ tsp nutritional yeast
  • 1 tsp dried basil
  • ½ tsp dried thyme
  • 1 small Vidalia onion, diced
  • ¼ cup red onion, diced
  • 1–2 tbsp cottage cheese (for added creaminess)
  • Xanthan gum (as needed for thickening)

🔪 Instructions

1. Prepare the Sausage

Option 1: Breakfast Sausage

  1. Preheat oven to 350°F.
  2. Spread sausage evenly on a parchment-lined baking sheet.
  3. Bake for 15–20 minutes.
  4. Remove and break into chunks.

👉 This gives you those hearty, rustic pieces that hold up in the gravy.

Option 2: Ground Chicken

  1. In a bowl, combine chicken, olive oil, and all seasonings.
  2. Mix well until fully coated.
  3. Spread on a baking sheet and bake as above.

2. Enhance the Flavor (Don’t Skip This 👀)

  1. Transfer cooked meat to a skillet.
  2. Add 1 cup of water and cook over medium heat.
  3. Let it simmer until the water cooks off.

👉 This step reduces excess grease and pulls out deeper flavor.

3. Build the Gravy

  1. In a Dutch oven or deep skillet, melt butter over low–medium heat.
  2. Add diced onions; sauté 5–7 minutes until softened (not mushy).
  3. Lower the heat and add:
    • heavy cream
    • minced garlic
    • cheeses
    • chicken bouillon
    • seasonings
  4. Stir continuously as everything melts together.

👉 This is where it transforms… from ingredients into something you feel.

4. Bring It All Together

  1. Add sausage to the gravy.
  2. Stir gently and let simmer 5–7 minutes.
  3. Add:
    • cottage cheese (for extra creaminess)
    • xanthan gum (a pinch at a time, only if needed)

🧠 Texture Check
