Method
Prepare the eggs:
- Boil the eggs, then cool, peel, and dice them. Set aside.
Prepare the chickpeas:
- Drain and rinse the chickpeas well. Place them in a deep bowl and mash most of them with a fork or potato masher, leaving some chickpeas partially intact for texture. A food processor can be used, but pulse lightly rather than processing until smooth. You want a mixture of creamy and chunky chickpeas.
Chop the vegetables:
- Finely dice the red bell pepper, green bell pepper, Vidalia onion, red onion, green onions, and fresh celery if using. Keeping the vegetables fairly small helps distribute them throughout every bite.
Make the dressing:
- In a large mixing bowl, combine the mayonnaise, Honey Dijon, prepared mustard, sweet relish, dill relish, dill weed, Mrs. Dash Garlic & Herb, dried cilantro, Cilantro Lime Pepper, sugar, cayenne if using, and a light amount of salt. Mix until smooth and evenly combined. The flavor should be slightly sweet, tangy, earthy, and herb-forward. Adjust the seasoning to your taste.
Assemble the salad:
- Add the diced vegetables and eggs to the dressing and mix well. Fold in the mashed chickpeas until everything is evenly coated. If the mixture seems too saucy, add additional chickpeas or another boiled egg. If it seems too dry, add a little more mayonnaise or Honey Dijon.
Garnish and chill:
- Top with sliced green onion, a light sprinkle of dried cilantro, and a very light sprinkle of cayenne if desired. Cover and refrigerate for 1–2 hours before serving so the flavors can blend and the texture can settle.
Notes
Don’t mash every chickpea completely smooth. The uneven texture is intentional.
Adjust the mayonnaise and dressing to get a scoopable, well-coated consistency rather than an overly wet salad.
Taste again after chilling and adjust the seasoning if needed.
For additional protein, add tuna, salmon, grilled chicken, extra eggs, or serve with protein pasta or high-protein bread.
Serve with crackers, as a sandwich, in lettuce wraps, on cucumber slices, or inside tomato halves.
Store refrigerated in an airtight container for about 3–5 days. Freezing is not recommended because the texture will change.
