Ingredients
  

  • 1 tsp Chicken Boullion
  • 1 can Chickpeas drained, reserve
  • 3 Boiled Eggs peeled and diced
  • ¼ cup Red Bell Pepper finely diced
  • ¼ cup Green Bell Pepper finely diced
  • ½ cup Vidalia Onion finely diced
  • ¼ cup Red Onion finely diced
  • 3 Green Onions small slices
  • Pinch Celery Flakes optional, or ¼ cup fresh celery, finely minced
Dressing
  • ½ cup Hellmann’s or Duke’s mayonnaise*
  • ¼ cup G Hughes Sugar Free Honey Dijon or to taste
  • cup Prepared Mustard
  • ¼ cup Sweet Relish
  • 2 tablespoons Dill Relish
Seasonings
  • 2 tbsp. Dill Weed
  • 2 tbsp.. Olive Oil
  • 3 tbsp. Mrs. Dash Garlic & Herb
  • 1 tbps Dried Clantro
  • 3 tbsp. Badia Cilantro Lime Pepper
  • Pinch Sugar
  • Pinch Cayenne Pepper optional
  • Salt to taste

Method
 

Prepare the eggs:
  1. Boil the eggs, then cool, peel, and dice them. Set aside.
Prepare the chickpeas:
  1. Drain and rinse the chickpeas well. Place them in a deep bowl and mash most of them with a fork or potato masher, leaving some chickpeas partially intact for texture. A food processor can be used, but pulse lightly rather than processing until smooth. You want a mixture of creamy and chunky chickpeas.
Chop the vegetables:
  1. Finely dice the red bell pepper, green bell pepper, Vidalia onion, red onion, green onions, and fresh celery if using. Keeping the vegetables fairly small helps distribute them throughout every bite.
Make the dressing:
  1. In a large mixing bowl, combine the mayonnaise, Honey Dijon, prepared mustard, sweet relish, dill relish, dill weed, Mrs. Dash Garlic & Herb, dried cilantro, Cilantro Lime Pepper, sugar, cayenne if using, and a light amount of salt. Garnish and chill:
  1. Top with sliced green onion, a light sprinkle of dried cilantro, and a very light sprinkle of cayenne if desired. Cover and refrigerate for 1–2 hours before serving so the flavors can blend and the texture can settle.

Notes

Don’t mash every chickpea completely smooth. The uneven texture is intentional.
Adjust the mayonnaise and dressing to get a scoopable, well-coated consistency rather than an overly wet salad.
Taste again after chilling and adjust the seasoning if needed.
For additional protein, add tuna, salmon, grilled chicken, extra eggs, or serve with protein pasta or high-protein bread.

Store refrigerated in an airtight container for about 3–5 days. Freezing is not recommended because the texture will change.
